Centering Logo Between Menus

I've been using this article here:

But now when testing on iPhone the logo keeps starting out centered and then shifting to the left.

I'm also trying to use this article here (originally found in the GP forum):

I'm not sure if anything's interfering.

I had trouble getting the latter article to work and had to add top padding on both the desktop and mobile header because it kept displaying behind the top-bar.
