So I have categories in my header just like this site does however I noticed that when I click on a category link it automatically shows the entire post. How can I get the category pages to look just like my homepage layout the only difference would be that only post that have been selected for that category would be shown instead of all post.

Your home page is actually using WP Show Posts.
If you set the customizer setting to show excerpt then it should work for category pages as well:
