Blog pages for categories

Hi there!
I hope someone can help as I am very confused. I would like a number of pages to display blog post excerpts dependent on category. These pages need to be in the style of blog layout but my homepage is static. How can I do this? There will probably be around 3 pages laid out like this.
If there is a way I can introduce each category with a featured image and a short paragraph about what to expect from the following posts, that would be ideal. In a perfect world, the page would have a featured image at the top, plus a paragraph before changing into block like organisation of blog posts.
I have tried creating a page hero but this is still not generating what I want. Any help would be appreciated, I am a total beginner!

You will likely need a plugin for this.
This one might be worth trying: https://wordpress.org/plugins/wp-show-posts/
That plugin allows you to create lists of posts, which you can query based on their category.
