Adding a second column for posts on mobile

I would LOVE to add a second column for my posts on mobile. So, when you see the blog grid view of the posts I would want two columns on mobile vs. the one. Same when they click on a category. To see the results in grid, with 2 columns.
How can this be done?

Usually there isn't enough room on mobile to show columns.
The category page should also be one columns as well though so it's weird they are two.
Can you link me to the site and page in question?
