Add schema markup

I am looking to add schema markup to my site - I'm trying to just manually add the markup somewhere if possible - ideally without using a plugin. Is this possible? If not, are you aware of any decent plugins that won't impact performance?
Ok, I've figured out a way to do this - I added a shortcode block in the page header (on a page by page basis) and pasted my markup in there. It doesn't impact how the page looks and passes the various structured data testing tools online - Google etc.
