See this option in WooCommerce settings:
With this enabled, everytime when the user clicks the Add to Cart button on my variable product page, the item should be added to cart without needing the whole page to be refreshed right?
However, the AJAX functionality is not working, and the whole page still refreshes itself.

i am not seeing this happen. Can you try clearing this in an incognito / private browser?
