I don’t understand what’s going on.
I have upgraded on several sites GenerateBlocks to version 1.7.
On one site in particular the customization tools are completely different. It almost looks like an advanced version of the builder!!!

This happens on only one site of four updated. These are four sites all the same freshly installed and with the same plugins and themes active.
Any suggestions or how can I turn off this interesting mode ?

Just writing this hoping this helps.
It is updated and in my opinion, you should get used to it cuz there are a lot of amazing options and it is way more convenient.
You can go to generatepress block site and there you can find the instruction videos and on documentaion, you can find what has been changed. It is not much different.
Also, you can keep the old block and it would work as it has done without changing.
This is what I have found.

But why don’t I see the same changes updates on the other sites?

any site that was built with GenerateBlocks before the 1.7 ( and GB Pro 1.5 ) updates, blocks such as Containers and Buttons that were already there will have the legacy controls. So nothing beaks on update.
You can upgrade a legacy container to a new container as covered in the doc you linked above.
If however you’re not seeing the new features even on new blocks then try clearing your browser cookies and caches.

great job … but I’m afraid that customers will find it much harder to use this than the previous version.
Maybe in the future a “switch” that allows these controls to be hidden or not from the user … I don’t know.
