I am happily using a Template from the Site Library with Generate Press Premium and Generate Blocks Pro. No child Theme.
I’ve made minor changes to the site via adjustments / additions to the Template – font size, link underline / color etc. And added a little bit of CSS with a Code Snippet plugin for Date Modified.
I’ve been updating GPP and GBP with the latest betas and all is good.
But when an update to the TEMPLATE is released and I upgrade, will this break my site? Or do I need to install a child Theme?

No – that would get us in a lot of trouble 😉
Looking at your description below, you don’t need a child theme.
