Is it possible to create a nifty country pull-down menu like that (https://www.lemonade.com/de on the bottom right hand side) with GenerateBlocks????

no, language switchers are generally included with translation plugins like Polylang or WPML
Actually I am not looking for a language switcher. I will do a German and an English version and was just looking for an elegant and nice-looking way to switch from one version to the other and I liked the pull-down idea.

You can create a Button Block and add it through a Block Element Hook hooked to your navigation.
That’s one way you can add your own “switcher” for the German and English versions of the site. Reference: https://docs.generatepress.com/article/block-element-hook/
