Do you mean the post meta, like author name/post date?
If so, you can enable them in customizer > layout > blog.
Make sure the blog module is activated at appearance > GeneratePress.

I mean Sub heading after the title that we keep for news website
There’s no such option in WP by default, GP doesn’t have this option as well.
I would recommend using a plugin like Advanced custom field to create the Subtitle field for your posts.
Then you can use a block element and a headline block of the GenerateBlocks plugin to pull the field value dynamically.
Or try some plugins dedicated to the subtitle features.

If you activate the custom field in the editor then it should be activated on every post.
This is something you can try first then see if you run into any issues.
Or you can just use a plugin like this:
