Hi, congratulations on the theme! On my page I have selected the option to show the latest entries on the home page. I would like to know how I can show specific categories on the homepage.

I’m not fully sure I understand what you’re aiming for exactly but to clarify:
Are you aiming for a categorized post listing similar to what Site Template Display has for its post listings?
https://gpsites.co/dispatch/If so, you’ll need a post list plugin for that. You can try plugins like WP Show Posts for this.
