how can i remove the part near the bottom which says

Then in Customizer > Typography (or Colors) > Footer > Footer Bar for fonts and colors

I removed the copyright bar completely by using code snippet and adding the php in that link.
Is there a way I can delete the code which generated that copyright function in the first place?
Id rather not add a plugin if possible

There’s no need to use a plugin to remove it, just the PHP function is required. That function can be added in your child theme functions.php file if you don’t want to use something like Code Snippets. More info on that here: https://docs.generatepress.com/article/adding-php/
