"Your latest posts" is also showing new Pages. Can I stop that?

I'm testing GP on a new site, with Settings / Reading set to the default, "Your homepage displays": "Your latest posts". But if I create a new Page, it shows up there as well. Can I control that? Maybe by showing only Posts in a given Category?

I'm considering GP to replace Avada, which is too slow, and it had a "blog" content type on a static page that was configurable to show only posts in a set of Categories. Is there something like that in GP, without slowing it down too much? I'm reluctant to touch Elementor out of this same caution.

Pages shouldn't show in the Blog page (?)
If you want to create a static page and selectively display different posts by category etc then i can recommend Toms WP Show Posts plugin.

I agreet they shouldn't, but they do. Is this a bug in the GP Theme with respect to the WordPress standards?

Hmm, when I created my new Pages, something also created Posts by the same name and with the same content. Those are gone, now, and have not recurred. I wonder what did that?

This isn't a GP standard. It would require a custom function or plugin to include pages in the loop.

Yea, WordPress by default only includes posts within the post post type in the blog loop.

You might have a plugin or custom function hooking into the pre_get_posts hook.
