I’m having a few issues with my WooCommerce Pages where the logged out [of WordPress] layouts are completely different to the logged in layouts.

Hi there,

the logged out [of WordPress] layouts are completely different to the logged in layouts.

When this happens, generally there is a caching issue or plugin conflict so try eliminating that first by disabling all plugins.

If that doesn't work, then I would recommend checking with Elementor's support as the content of that page is all coming from Elementor.
