What settings do I need to reset to reset the main logo in site identity?

There is no reset for Site Identity. You simply just remove or replace the logo.

For the actual problem of logo not changing, make sure:
- You are not looking at the navigation logo:

- No caching issues (plugin cache etc).

Can you try clearing the caching plugin before de-activating it?

Looks like a caching issue to me.

You could try de-activating all plugins except GP Premium to make sure nothing else is interfering.

Might need to check with your host.

I figured it out. It was due to the staging site using HTTPS, while all the images where using HTTP. I used Better Search and Replace to force all content to HTTPS, and now it works.
