Updated Dates

I have implemented the updated post dates using your snippet and CSS here and it works great.

Is there a way to control how the updated aspect works? For example, I just added new categories to a series of posts and that was the only thing I did and it changed the updated date. Is there a way to better control when the dates update like manually or when the posts have a more significant update than just the categories?
Or does a plugin like this one below or one similar handle this better?

I would say give that plugin a shot if you want to handle more complicate cases like this as it sounds like it would require a lot of custom coding.
