Switching from WordPress from German to German (Sie) does not work.

Hello Tom,
sometimes your language is so much easier, even if I only master it rudimentarily. :-) For you there is only the speech "you", in contrast to us German with the distinction of "Du" and the formal "Sie"
As the title implies, the conversion of WordPress from German to German (Sie) does not work in the GeneratePress Theme :-(
If I activate the Twenty Seventeen theme, everything works fine.
If you have a solution for that, I would be very grateful to you, as this is required for a customer website.

If so, we'll need to get it up to 100% in order for the translation to ship. If you can help with that, we can get it shipped ASAP :)

It should be available now.
You can check by going to "Dashboard > Updates" and clicking the Update Translations button :)

I can not find this. There are also no updates of the theme displayed.
Or did I misunderstand something?

Well that's annoying, you can see the language is at 99% now: https://translate.wordpress.org/locale/de/formal/wp-themes/generatepress
If you go here: https://translate.wordpress.org/projects/wp-themes/generatepress/de/formal
Click "Export" at the bottom. It should download a .po file.
Upload that file into wp-content/translations/themes (or something similar) using FTP or your file manager inside your hosting control panel.
You should see a bunch of other .po files in there.

Alright. But did not work until after I renamed the file in generatepress-de_DE_formal.po.
One more question. I always use a child of a theme. How can I ensure that subsequent changes to a translation or plugin are not lost during an update?

Since you added them in wp-content/translations, they won't be lost when you update :)
