Hey there,
What would it take to create a stepped off-canvas menu like this one on MOBILE?

unless there is a plugin that would require custom development which you would need to engage with a custom developer for.
cool thanks I thought this may have been an option somewhere, or already on the agenda for future dev :)
That is a rather cool menu. It uses a totally different HTML structure to a standard WordPress menu so would be difficult to customize existing GP menus to suit. Sorry we can't help in this instance.
