if i wanted to review products and want to give a star rating on certain categories, is that possible GP premium and GB pro?

No - GP and GB doesn't have this function built-in.

so how might one go about obtaining this feature? is this something GP is working towards including in the future updates or not at all?
You will need to find a plugin that offers the functionality you are looking for.
This isn't something we will be adding.
