How can I change the title texts and the sharing texts such as "Check out this awesome article by ABC editors..." of the social icons?

Yes exactely. For example if i share a post by e-mail

That would be controlled by whatever Sharing plugin you're using.

There isn't a default GP Social settings included in GP.
If you mean the GP Social Sharing Plugin that is used on some of the Site Library sites:

You would need to speak with the Author.
