It’s likely best to set the itemtype on the Elementor container of the actual reviews. That way you can keep the default GP microdata as it is. Has Elementor got back to you on this yet?

We will be implementing a JSON-LD option, but it will be quite basic and not specific to rating/reviews etc..

Most likely. Unless you can apply microdata to the containing element manually? I’m not super familiar with Elementor.
