Remove link to author but leave author name as plain text

Right now there is only an ability to show or hide the author, but the author is a link so if clicked, it exposes login/username.
I want to show the author but just as plain text...no link. I can't find anything in the *cough* customizer, other than an option to show/hide it which doesn't solve the issue. The page templates in the parent theme don't reference the author at all so I can't figure out how to best copy the templates into my child theme and edit it there.
