Posts to fall under headers

How can I get my posts to fall under headers like they do under my Articles header? what I want is to be able to categorize a post, let's say "Health" and have that particular post to fall under that header. This without having to place the post under the header on the menu page.

I'm not 100% sure what you mean? Can you explain a bit more?
If you have a category that you want to display, you can add it to the menu by opening the "Categories" box on the left in "Appearance > Menus". Then you can add your specific categories to the menu.

Is there any way to do it without putting it in the menu under the header? When I write a hundred articles, the menu will be too full to easily put them in. How do you do it like how the Articles header works. It automatically places the post under it. Can't the Categories selection of each post pull it under the right header?

If you categorize your posts, you don't need to add posts or even the category to the menu. You'll simply be able to go to yoursite.com/category/the-cat-name to see all of the posts under that category.
Then it's up to you how users get to that page, whether it's through your content, or a menu item to the category in the menu.
I'm sorry, not completely understanding. Are you basically saying they can't fall under the headers unless I put them as a sub menu under the menu header? And categories can only be found under the category search drop down?
What do you mean by "headers" exactly?
I have 4 menu topics, "Life with Dogs," "Training," "Health," and "Personalities." They are at the top of the home page. I want the posts to go under them by category, so when you click on them they are there. Like they do under "Articles." DogPersonas.com
In that case, you would create those categories in "Posts > Categories". Then add your posts to those specific categories.
Then in "Appearance > Menus", you would replace those menu items you currently have with the new categories you've added. On the left where you can choose pages etc.. you can choose "Categories" to include in the menu instead.
That way when you click on the category, it will display the posts exactly like it does in "Articles".
