Pages vs posts

When I just click on the new post on the left, on the top and write a post, which page would it post to?

It would be the Posts page:

I am not sure what you mean. I don't have a posts page.
Then it would typically be your front page.
You can also create a new page and assign it to be the posts page in the Readings setting I linked above.
This is all handled by WordPress itself.
