I’m slowly ditching the built-in WP block editor, and using Generate Blocks (which is awesome) for building blocks/pages/grids etc.
I was reading the help documents and noticed this in the Headline Overview:
This block isn’t intended to be used for full paragraphs of text. Instead, you should use the standard Paragraph block for that.
Does this mean it’s not suitable for multiple paragraphs, but can be used to add say one paragraph of text within a single grid container?
I would rather build all blocks solely with GB, rather than have a mixed bunch of WP and GB blocks within the same container(s).

Headlines are for bodies of text that are supposed to be unique. It’s for making a specific line of text standout.
To answer the question:
It adds unnecessary extra steps if you want to style the paragraphs made with Headline block when you can simply style all of the paragraphs made with the Gutenberg default paragraph block on the Theme’s customizer settings.

For contents that are large walls of text, yes the default paragraph block is better. Especially if you don’t plan in making emphasis by adding bold or different colors on certain pars of it.
If so, what’s the point of included a Paragraph option within the GB headline block.
Paragraphs from the Headline block can be styled on its own within its block setting while the default paragraph block follows the theme settings.
That said, it’s for parts of the content that you want to style differently from the rest of the other paragraphs.
Example: You have a content that has 5 paragraphs and you want to put emphasis of paragraph #3. You can use Headline block for paragraph #3 to be able to style for emphasis so it appears slightly different from the generic wall of text within the group of paragraphs.
