Does theme work well with MonsterInsights plugin?

I'm not exactly sure what the plugin does but if a plugin is built to work with WordPress themes - it will work with GP :)

If you are just wanting to add Google Analytics code, then simply use Hooke Element should do:

MonsterInsights is a Google Analytics tool which is well-rated for it's user experience and features. I'm concerned if I do the hook / code myself that I won't have the same level of analysis available to me (I'm still a newbie with code)
