The questions are a bit tough to answer but I’ll try my best to address them here.
– GP + GPP without GB: You can build your website like this no problem. However, you will be limited to use the core blocks such as columns, headings and buttons block which don’t offer many options.
– GP + GPP + GB: Using GB will give you access to 4 blocks Headline (similar to headings block), Grid/Container (similar to columns block) and Buttons (similar to button block) that offer much more controls over the core blocks. See full info in our documentation:

We’d like to think that with the help of these 4 blocks, you can achieve any layouts.

– GB vs page builder: GB uses utilizes the default block/Gutenberg editor whereas page builders use their own drag and drop system normally. If you create two pages with exact same layouts, GB should outperforms the page builder for sure.
– GPP 2.0: The new version allows you to pull in dynamic data but GB is required to do so.
