how to use custom fields to edit the blog page (post page)
There are many options in custom fields... It's confusing a bit. is there any page that describes how to use it?

I'm not exactly sure I understand what you mean.
The use of custom field/s does not edit the blog page in any way.
It is used if you want to assign specific values to posts/pages that can be dynamically called to be displayed on posts/pages.
