I’m trying to create a complex menu like on https://www.axa.com/.
The solution I have at the moment is to inject code with jQuery. What menu code/php file do I need to work with to get this done with a child theme?

Are you referring to the mega menu?
Have you considered using a plugin? It should make your life easier.
If not you will need to provide more info on the instructions. what code are you adding and where are you supposed to be adding it etc.
