Categories work only in "QuickEdit", not in edior

Hi everyone,
it's me again ;-)
As the topic before, this might not actually be Generate-Press-related. I switched my host and started directly to use GP. So it might also be from host-switching...
Anyways: When I add the post categories in the editor and then publish the post, it will return with the category "general/Allgemein".
When I change the categories using the Quick-Edit in the post-overview, I can change the categories as I wish.
Same is true for tags.
Any idea what to do is highly appreciated!

go to Dashboard > Tools > Site Health - are there any issues being reported ?
It says there are no problems.
Hmmm... as there any info being reported there? Specifically something that mentions REST
It does not save the site when I put a category in there.
Can you temporarily disable ALL plugins and try adding a category ?
