Can I use Elementor with the classic theme?

yes you can use Elementor with the classic theme to create your post/page content.
Shouldn't be any problems, Elementor will add more code so it could reduce the page load times.

If you're site is a blog then i would generally advise against using a pagebuilder for your Post content - if in the future you want to remove the pagebuilder you may have a lot of repair work to do.
