Building A Site With Pages VS Posts

Any advantage to designing a Generatepress site using pages instead posts to build content? I will be using a static homepage and my content pages will change very little.
Also, any SEO differances I should be concerned about? I know posts will have a publish date but pages do not. Does that affect search rankings at all?
