Adding text to header. . . or is it the header?

For those that saw my other post, you know I copied and moved a site. It was using a very customized (and locked) theme, and I'm trying to re-create the look as best I can.
Here's the original site -
In the same area as the logo, justified off to the right, is some contact text. I'd call this area the Header.
So I tried coming up with the same look on the new site -
I went into Customize, and added the logo in Site Identity. So far so good. It appeared above the Nav bar in what, again, I considered the Header. I have "Hide site title" box ticked.
Still in Customize, I go into Layout/Header. There's no logo, nor any text showing.
I discovered the Header Element, so I'm using this to add the contact text off to the right of the Header. However, when I make it live and update the page, this text appears under my nav bar, not above it. Somehow, there's a block of text in a white box (Welcome to Chelle's Bake Shop!) that appears to be associated with this Header Element, and I have no idea where it's coming from. It's not on the Welcome page design, and I don't find it on the MetaSlider banner setup.
In the Header Element, when I choose "Merge" it puts the contact text above the Nav bar - hooray! But it drags the text-in-a-box up underneath the Nav bar.
So I added the logo in Layout/Header and removed it in Site Identity. Now it's totally gone - Sir Not Appearing In This Movie. What the heck am I doing wrong?
Here's what I want: 1) the logo and the contact text to appear above the Nav bar on all pages of the site and 2) to get rid of this "header" text in a box that I apparently inherited from the code on the original site where it was in a different typeface BELOW the MetaSlider instead of appearing ABOVE it. (This only happens on the Welcome page, BTW.)

so go to Customizer > Site Identity and add the logo. Then go to Customizer > Widgets > Header Widget and add your contact details using a HTML widget
Then remove the Header Element you created.
FYI
Top of the page is the Site Header (for logo, branding and sometimes navigation).
The Header Element always sites below the Site Header to form a Page Hero :)
