How do I add HTML tag to the <head> section of my site's index.html file?

Hi there,
create a new Hook Element:
https://docs.generatepress.com/article/hooks-element-overview/
Add you pinterest code to the hook content.
Select the WP_Head hook from the list.
Set you Display Rules to Entire Site and save.
Worked like a charm!
